1997 RustRidge Estate Cabernet Sauvignon
The color of this wine is a deeply rich burgundy that coats the glass. The bouquet reveals a complexity that starts with a Bordeaux-like earthiness and opens to reveal a touch of saddle leather, cigar-box cedar, a hint of anise and cranberry. The cranberry reigns on the palate with a dash of sour cherry. The tannins and acidity of the wine indicate longevity. We suggest pairing it with hearty cheeses and meats, or, better yet a combination of the two - try a butter and blue cheese melt over a filet mignon.
This is an unfiltered wine and there may be some bottle variation. If the wine seems “tight” it may need to be aerated and decanted before serving.
